Coconut Mango Chia Seed Pudding
- 2 c. Lite Coconut Milk
- ¼ c. Chia Seeds
- ¼ c. Unsweetened, Shredded Coconut
- 1T. Pure Vanilla Extract
- 2 T. Agave (or honey/sweetener of choice)
- 1 Ripe Mango, chopped
- Mix all ingredients together in a large bowl. Cover and let sit in refrigerator for 5-6 hours or overnight. Serve chilled.
